Ingredients: Sweet corn (cream style) : 200 gms or 1 14-16oz can
Chicken stock : ½ carton
Cornstarch or white flour : 1 tbsp
White pepper : ½ tsp
Spring green onion (chopped) : 1
Green chillies (chopped) : 2-3
Eggs : 2
Sugar : pinch
Sesame oil : 1 tsp
Chicken breast (cut into strips) : 1
Directions: Heat a bit of oil and stir fry chicken. Add chicken stock and bring to a boil. Add corn and let boil for 2 minutes. Add cornstarch, pepper, sugar and boil for a minute. In a separate bowl, beat eggs. Strain eggs into soup. Garnish with green onion, chillies and sesame oil.
* Vegetarian variation : substitute chicken stock for vegetable stock and eliminate chicken!
